Chardonnay

Aquitania Chardonnay was born in 2012 after the great success of its older brother SOLdeSOL Chardonnay.

With this wine we wanted to create something different from what we already did, and we decided to make a wine without the contribution of the wood from the barrel, to reach consumers who were looking for a wine of a different style.

In Aquitaine Chardonnay there are interesting aromas and great acidity because the maturity period begins, from January to the end of February, when the heat is gone and the low temperatures allow to preserve the fruit and the acidity of the grape.

The low yields produced in this cold zone make the resulting wine very concentrated and with good volume on the palate.

Vintage characteristics: This year 2018 in the Traiguén region was quite cold, and we even had rain at harvest.

Characteristics of the vineyards (age, soils, etc.): These vineyards were planted in 1993 in deep red clay soils of volcanic origin with very good water retention. Thus, in summer the vineyard must be fed moderately with water through a drop by drop system, since between the months of December and March the rains are practically nil and with temperatures ranging between 8 and 30 degrees in addition to the wind. south that helps dehydration of the vineyard.

The plants are of mass origin, trellised, pruned in double Guyot and a density of 2,500 plants / ha.

Elaboration (including used yeasts): The harvest is done manually in boxes of 10 kg the last week of April. The grapes are transported by truck overnight to Viña Aquitania’s wineries in Santiago. The low temperature of the time and the fact that the grapes come in boxes of 10kgs allows the fruit to arrive cold and in perfect condition.

The grapes are pressed whole, without prior grinding, in a low pressure, slow cycle pneumatic press.

Aging: The grape juice is taken to a stainless steel vat for decantation for 36 hours and then transferred to another 6,000-liter stainless steel tank, in which the alcoholic fermentation with Saccharomyces cerevisiae EC 1118 yeasts is carried out, which lasts approximately three weeks.

For 9 months, the wine remains on its lees in this same tank without any transfer. Two times a week the lees are moved with gas.

With natural clarification and without malolactic fermentation, a closed filtration is carried out prior to bottling.

Tasting Note

Fresh and elegant Chardonnay with a soft and bright yellow color, which has a high aromatic intensity, intertwining minerality with notes of citrus fruits. On the palate, its freshness and good acidity stand out, followed by a long and silky finish.
