Sauvignon Blanc

SOLdeSOL Sauvignon Blanc was born in 2012 after the plantations of this variety were made in 2009 by our Viñas de Traiguen in the Malleco Valley.

We decided to plant Sauvignon Blanc after realizing the great quality that we had obtained with our SOLdeSOL Chardonnay and Pinot Noir.

When these first grapes arrived, we realized the great quality and we decided to make a wine of good complexity and elegance that would express the minerality of the volcanic soil with that acidic fruit that the cold climate of the Malleco Valley gives us.

Characteristics of the vineyards (age, soils, etc.): These vineyards were planted in 2009 in deep red clay soils of volcanic origin that have a very good water retention. These new Sauvignon Blanc plantations do not have irrigation installed, only a little sprinkler irrigation is used during some days of the summer.

Elaboration: The harvest is done manually in boxes of 10 kg. The grapes are transported by truck overnight to the Viña Aquitania wineries in Santiago. The low temperature of the time and the fact that the grapes come in boxes of 10 kg allow the grapes to arrive in perfect condition.

The grapes are pressed whole, without prior grinding in a low pressure, slow cycle pneumatic press.

Aging: The grape juice is taken to a stainless-steel vat for decantation for 36 hours and then 50% of the wines are transferred to French oak barrels of 400 and 225 liters, which are used 50% of two and 50% three years of use. There the fermentation takes place, which lasts approximately two weeks. Malolactic fermentation is not performed

For 4 months the wine is kept in these same barrels on its lees without any transfer. Batonage is performed twice a week.

Then all the wine is gathered in a stainless-steel vat and stored until bottling, which is then carried out after a natural clarification and closed filtration prior to bottling.

Tasting Note

Yellow Sauvignon Blanc with greenish tones and bright. In the aroma, mineral notes of citrus fruits are appreciated with slight notes of green pepper. In the mouth it is a wine of great volume of good concentration, with a fresh and high acidity, long persistence and silkiness.
